Rhubarb Muffins Recipe

Ingredients

For the Muffins:

  • 1 egg
  • 4 egg yolks
  • 150 grams sugar
  • 1 packet RUF Tonka Sugar
  • 150 grams soft butter
  • 200 grams flour
  • ½ packet baking powder
  • 500 grams rhubarb

For the Meringue:

  • 4 egg whites
  • 150 grams sugar

Instructions

  • First, peel and chop the rhubarb, then set aside. Preheat the oven to 170°C.
  • In a mixing bowl, combine the egg and four yolks with the sugar and Tonka sugar. Beat with an electric mixer until the mixture is fluffy.
  • Next, add the soft butter to the egg mixture. Sift the flour with the baking powder and gently fold into the mixture using a whisk.
  • Add the diced rhubarb to the mixture and divide it into 12 cupcake liners. Bake the muffins for approximately 25 minutes.
  • Meanwhile, prepare the meringue. Beat the egg whites with an electric mixer until they are stiff and fluffy.
  • Gradually add the sugar, continuing to beat until the sugar dissolves and the mixture becomes glossy.
  • Fill a piping bag with a star tip with the meringue mixture and decorate the warm muffins after baking. Bake the muffins for an additional 5 minutes.

Tip: You can substitute rhubarb with other seasonal fruits like strawberries, blueberries, or peaches.
